Signature Dish: Smokey Sausage Tomato Pasta

This is a Signature Dish competition entry by Louis1085 . There’s some really strong flavours in this tomato sauce, so I bet it packs a delicious punch! – Matt

This recipe is inspired by my mums cooking which I’ve attempted to perfect over the years. Its a simple tomato sauce recipe with a lovely smoky taste gained by adding Mattessons sausage, which can be picked up from most supermarkets.

For the best results you should try and source the best possible Balsamic vinegar and red wine. Its great enjoyed with fresh bread to mop up any excess sauce.

Serves 4

  • A dash of olive oil
  • 1 Large onion
  • 3 Cloves of garlic
  • 1 Small chilli, de-seeded
  • 1 Red pepper
  • 1 Mattessons smoked sausage
  • 2 tins chopped tomatoes
  • 1 tbs tomato puree
  • 1 tsp balsamic vinegar
  • 1 tsp sugar
  • Healthy dash of red wine
  • Large handful of basil
  • Your pasta of choice
  • Shavings of parmesan

First prepare your workspace, you may wish to pre-chop your vegetables.

Begin the recipe by chopping the onion and thinly slicing the garlic. Add the olive oil to the pan and put on a medium heat. Add the onion and garlic. Begin chopping the chilli and discarding the seeds (you may want to add them if you like your food slightly hotter) and adding this to the pan stirring as you go.

Next, chop the red pepper and add this to the pan. Cut and add the Mattessons sausage and lightly fry. Next add the tinned tomatoes and tomato puree along with the balsamic vinegar and sugar. This really brings out the sweetness of the tomatoes. Add your red wine and leave to simmer and reduce slightly.

As your sauce is simmering bring a large pan of water to the boil and follow your chosen pasta’s cooking instructions. Once your pasta is al dente add the basil leaves to your tomato sauce and serve immediately with savings of parmesan cheese.
