Signature Dish: Bombay Courgettes

This was first made as a rather more exotic side dish in a traditional turkey Christmas dinner. It has become a regular side dish, lunch main, snack.

If you don’t have any curry powder you can use 1 teaspoon of ground cumin and coriander and half a teaspoon of cayenne and ground black pepper mixed together.

Serves 4

  • 1oz butter or 1 tbsp vegetable oil
  • 6 medium courgettes, sliced
  • 1 tbsp plain flour
  • 2 tsp curry powder
  • Pinch salt
  • Half to a pint of milk

Heat the butter or oil in a deep frying pan. Add the courgettes and soften.

Mix the flour, curry powder and salt together and scatter evenly over the courgettes. Stir and fry spices without burning.

Add milk slowly stirring constantly to thicken. Serve.
