French Onion Soup


A delicious French Onion Soup is the perfect way to warm up after a walk in the cold autumn wind. It takes time and patience to make (and maybe some onion goggles too) but it’s worth it.

To make it even nicer serve with crusty bread, topped with grated Gruyère or strong cheddar cheese.

Serves 4

  • 1.6Kg onions, peeled and thinly sliced
  • 3-4 garlic cloves, peeled and sliced
  • 2tsp fresh thyme leaves
  • 750ml beef or chicken stock
  • Olive Oil
  • Salt and Pepper

Pour a little olive oil in a large thick bottomed saucepan and place on a medium heat. Add the onions and garlic and fry for 20 or so minutes until glossy and reduced in size.

Turn up the heat and fry until brown and caramelised, making sure to stir and scape the bottom of the pan often, to stop the onions from catching and burning. This can take another 20 minutes.

Add the hot stock, thyme a generous amount of pepper and a little salt. Simmer for 10 minutes before serving with crusty bread.
