Egg and Bacon Stack

If there was ever a good use for eggy bread, this is it! First tried at a local cafe, this proved to be the ideal hangover cure and a great kick-start to the day.

The combination of egg, bacon and maple syrup is heavenly and deserves to be matched with a big cup of fresh filter coffee and glass of freshly squeezed orange juice.

Still got a hangover after this? Get some fresh air!

Egg and Bacon Stack

Serves 1

  • 2 slices thick white bread, crusts removed
  • 2 eggs, beaten
  • 4 rashers streaky bacon
  • maple syrup
  • Olive oil
  • Salt and pepper

Place a large non stick frying pan on a medium heat. Add a teaspoon of olive oil to one side, then add the bacon.

Season the eggs with a little salt and pepper, then dunk in the bread, turning it over so it soaks up the egg. Add the eggy bread to the same pan and cook on both sides until just starting to brown, and the egg is cooked.

Remove the bacon and eggy bread and stack on a plate. Drizzle with maple syrup and serve.
