Sweet Potato & Pepper Soup

Serves 3

  • 1 onion, chopped
  • 2 medium sweet potatoes, peeled and chopped
  • 2 peppers, chopped
  • 200ml chicken or vegetableĀ stock (1 stock cube)
  • salt and pepper
  • a dash of olive oil
  • sprinkling of fresh coriander (optional)

Fry the onions in the olive oil for 3 minutes. Add the sweet potato and fry for a further 5 minutes, before adding the peppers.

Pour in roughly 100ml of boiling water and simmer, covered, for about 10 minutes. Add the stock and cook for a further 10 minutes.

Use a hand-held blender to blend to a smooth soup. Serve.
