Rolled Ham & Cheese Omelette
It’s British Egg Week, so to celebrate we’ll be sharing some new egg recipes, as well as digging up some old favourites that you really should try. To kick us off we have a rolled ham and cheese omelette, that’s quick to make and perfect as a delicious breakfast or brunch. Will you be enjoying eggs this week?
- 8 Eggs
- 4 slices of good quality ham
- 4 handfuls of grated cheddar cheese (or a cheese of choice)
- A pinch of thyme
- Salt and pepper
- 3tbs Extra Virgin Olive Oil
Beat the eggs and season with salt and pepper. Heat the extra virgin olive oil in a non stick frying pan.
Add the beaten eggs, covering the base of the pan. Move the eggs gently to make sure it cooks evenly. Sprinkle with cheese and top with the ham slices.
Slide the omelette out of the pan onto a large chopping board. Add a pinch of thyme, roll up the omelette with the ham and cheese inside and cut diagonally into quarters.
Serve with a salad garnish and cherry tomatoes.
