Liver and Goji Berry Soup

Goji Berries

Liver and Goji Berry Soup is a perfect tonic for the body. It has many nutritional benefits and it tastes delicious too. Very simple to make, with the trick being the slow cooking time.

Serves 4

  • 300g pigs liver, diced
  • 100g of boneless pork or chicken, diced
  • 1 large onion, diced
  • 2 slices ginger
  • 4 pints chicken stock
  • 100g goji berries (fresh or dried)
  • Salt and pepper

Prepare the liver and pork or chicken by rinsing under cold running water for 30 seconds. Place in a large pan on a low heat and add the onions and ginger. Cook for a few minutes to seal in the flavour. There’s no need to add any oil or butter.

Next pour in the chicken stock and allow to simmer for around 2 hours, on a low heat setting.

Pour in the goji berries and simmer for a further 30 mins.

Add salt and pepper to taste. This is a runny based soup and not supposed to be thick, so drink it like it is.

  5. Matt, you can buy Goji berries from health food shops, like Holland and Barrett, and probably the bigger supermarkets these days too.
