Oreo Ice Cream

It seems everybody loves the Oreo cookie. So why not turn this delicious creation into an ice cream? 

Serves 6

  • 4 egg yolks
  • 125g caster sugar
  • 300ml milk
  • 300ml double cream
  • 1 ½ tsp vanilla essence
  • 1 packet of Oeros cookies

Whisk together the egg yolks and sugar until light in colour. Heat the milk in a heavy pan until just below boiling. Add a little of the hot milk to the egg yolk mixture and stir to blend, pour in remaining milk.

Pour back into the pan and heat gently, stirring constantly until froth disappears and the mixture coats the back of spoon. Do not let it boil.

Leave the custard to cool then stir in the cream and vanilla essence. Pour into container and freeze for 3 hours.

Meanwhile put the Oreos in a plastic bag and bash with a rolling pin to crush. Remove the ice cream from the freezer and tip into a bowl and mash to break down the ice crystals. Add the crushed Oreos and mix in well.

Freeze for another 2 hours and mash again. Mix in the praline bits and freeze again until ready to serve.
