This tasty dessert with a twist is quick and easy to make, and great with custard!
- 2 eggs
- 250g caster sugar
- 95g butter, plus extra for greasing
- 150ml milk
- 190g plain (all-purpose) flour
- 1 tbsp baking powder
- 6 pears, sliced
- custard, to serve
Beat the eggs and 225g of the sugar together until thick and pale. Melt the butter in the milk and bring to the boil. Pour into the eggs and sugar.
Sift the flour and baking powder over the surface and fold in with a metal spoon. Turn into a buttered roasting tin.
Arrange the pear slices over and sprinkle with the remaining sugar. Bake in a preheated oven at 200°C/400°F/gas mark 6 for about 25 minutes or until risen and cooked through.
Serve warm, cut into squares with custard.
