At the beginning of the week I received a huge batch of Greek Yoghurt from Total – I’m talking enough to fill the top shelf of my fridge, so I’m trying to use it all up in the most creative ways possible. I could just fill the bath and bathe in it so there’s so much, but eating it is probably a better idea.
My local greengrocer was selling some very ripe avocados so it seemed like the perfect opportunity to kick of my selection of recipes with a delicious guacamole.
This recipe takes about 2 minutes to make and is perfect to have as a little snack or as an appetiser. You’ll just need to cut up some peppers, carrots or cucumber to dip in it! The yoghurt I’m using is from their Fage (pronounced fa-yeh) range. It’s very creamy so is perfect to mix with my super-ripe avocado!
- 1 avocado
- 1 tbsp Greek yoghurt
- 1 tbsp lemon juice
- pinch cayenne pepper
- pinch paprika
Cut the avocado in half, take out the stone and use a spoon to scoop out the flesh. Place it in a bowl.
Mash the avocado with a fork until there’s no large lumps. Spoon in the Greek yoghurt, add the lemon juice, cayenne and paprika.
Mix everything together and serve. Easy.
