Chocolate cupcakes – silicone sisters
Hey, Laura’s little-big sister here. Since her cupcake post about the silicone cases, I realised that I needed to enhance my baking, to compete with Laura!
So, here’s my offering…
- 100g dark chocolate
- 100g butter
- 100g demerara sugar
- 2 eggs
- vanilla essence ( a generous shake)
- 50g natural yogurt
- 100g self-raising flour
- 1 tbsp cocoa powder
Choccy yoggy Icing
- 100g white chocolate
- 50g butter
- icing sugar (to desired consistency)
- vanilla essence
- 100g natural yogurt
Melt the chocolate, butter and sugar together. Leave it to cool.
Mix the yogurt, eggs and vanilla to a smooth, even consistency, then stir into the chocolate mix. Sift in the flour and cocoa powder and gently combine with the mixture.
Spoon into silicone cases, two thirds full. Bake for around 20 minutes, at 180°C/Gas mark 4 or 5. Once backed, allow to cool.
Meanwhile, mix up the icing ingredients with a fork, until a desired consistency. Using an icing bag, pipe icing onto cooled cakes. Decorate with sweeties, or fruit, as per your preference.
