Posh potato salad

Here’s a really quick and easy recipe, containing lots of yummy vegetables. It goes superbly well with a salad, or with a hot summer barbecue. I would always choose to eat this version, over a normal potato salad. You can taste each individual ingredient and the gherkins give a nice crunch.

Serves 2-3

  • 1 large potato, peeled and diced
  • 2 eggs
  • 1 large tomato, diced
  • 1/2 orange or red pepper, diced
  • 1 gherkin, diced
  • 1tsp basil, chopped
  • 2tbsp mayonnaise
  • salt and pepper

Get two pans of water boiling on the hob. Boil the potatoes for 8-10 minutes, making sure they don’t go too soft. Once they’re cooked rinse in cold water and drain well. For the eggs, boil them for about 10 minutes. Once they’re cooked, leave them in cold water for a few minutes, before removing the shell and dicing.

Combine all the ingredients together, add the mayonnaise and a little little salt and pepper. Enjoy!
