Sweet and spicy quinoa salad
I love this recipe – It’s so filling and yummy and you can have it either warm or cold depending on the crazy English weather!!
- 1 cup quinoa, uncooked
- 2 cups water
- 1 sweet potato, cut in small cubes
- 1 red bell pepper, diced
- toasted almond flakes
- 100g Feta cheese crumbled
- cayenne pepper to taste
- extra virgin olive oil
- juice of 1 lemon
- salt and pepper to taste
Simmer the quinoa in the water for about 15 minutes, or until water is gone and quinoa is light and fluffy.
Meanwhile, coat the sweet potato and red pepper with cayenne pepper and one tablespoon of olive oil, and roast in the oven for the same time.
Toss together the quinoa, sweet potato, pepper and the remaining ingredients in a large bowl, season with salt and pepper, allow to cool and enjoy!!
