Super quick pasta and pesto!
Last night I was home alone and didn’t feel like spending hours cooking something, like I normally do. With a homemade jar of green pesto in the fridge, I decided pasta and pesto would be one of the quickest and tastiest things to have. I could’ve just boiled some pasta and mixed in the pesto, but I like to make things a little more interesting than that!
- 1 serving of your favourite pasta
- 1/2 medium sized onion, finely sliced
- 1 inch of courgette, cut into thin strips
- 1 slice of ham, cut into strips
- 1 tomato, roughly diced
- 1 tbsp green pesto
- 1 tbsp crème fraîche
- olive oil for cooking
Cook and drain the pasta. Add a little olive oil to a large frying pan and place on a medium heat. Add the onions and stir for a couple of minutes, before adding the courgette. Once the onions turn golden, and the courgette begins to brown, add the pesto, crème fraîche, ham and tomato and stir. Taste the sauce and add some salt and pepper if necessary, before adding the pasta. Make sure all the pasta is nicely coated with the sauce before serving. Top with a little parmesan or cheddar.
As you’ll see from the photo, you could also add grilled asparagus, or leave out the crème fraîche.
